- 4 tbsp white granulated sugar
- Dash of cinnamon
For the Pineapple Cheesecake Filling:
- 2 8oz packages cream cheese, room temperature
- ½ cup plus 3 tbsp white granulated sugar
- ½ cup sour cream
- 1 tsp vanilla extract
- ¼ tsp lemon or orange zest
- 2 eggs, room temperature
- 1 tbsp all-purpose flour
- 8oz crushed pineapple, drained and squeezed
- For the topping:
- Cool Whip topping, thawed
- Coconut flakes, toasted
